Ok, to be totally pedantic here.

"phishing" is a term birders use. Birders, known to the un ininitiated as bird-watchers, use "phishing" to draw a bird out of its hiding place. Birds will hide in the trees/shrubs/etc, when they feel threatened, and phishing is a noise you make to lure the bird out into the open.

I'm not sure who coined "phising" for the current social engineering trick, but I'd be more inclined to consider it comes from birding, rather than hackerspeak for fishing, because you're making lovey-dovey noises in the hopes of drawing a target out of their safe haven.
