At least, with mozilla and firefox, you can get phone support (http://support.decisionone.com/mozilla/mozilla_help_main.ht
m). How do you get phone support from microsoft for Internet Explorer ?
For large scale mozilla/firefox deployment, do like any other software ! Packages + deploy. Mozilla configuration relies on text files that you just have to copy (or package and deploy, too). Maybe we will soon see a "large scale mozilla administrator", with a GUI and such, but you just have to wait a bit (or event develop one yourself and give it to the community : then you'll help yourself and others to move to the most reliable browser ever)
