I use Mozilla Thunderbird and it is always set to force plain text. Web bugs, IFrame tricks, or simply garish background colors are all banished. There isn't anything you need to say that can't be said with plain text. If you want me to visit a web site, then include the web sites address, but don't send html to my email address.
Unfortunately, it isn't easy to find a reliable, free, graphical email client that still gives you the "plain text" only option. Ii hope the Thunderbird developers will give users the option of ditching gecko all together. Have the default set to plain text only and perhaps a little more sanity will return to email.
Now if we can just make public key encryption more widespread.....
