Take a class to learn, get certified to demonstrate an ability to apply what you learned. Certification isn't a learning experience as you seem to imply, it's a confirmation or verification process which has now been diminished by SANS/GIAC.

Remember, in comparison to other ceritication exams (CISSP, CISA), the GIAC exams are online and open book. Anyone with the electronic course material can simply search their way through an exam. The practical requires them to demonstrate the knowledge and, quite frankly, those with no experience are fairly easy to weed out.
