A gap between the theoretical value and market price for 0-day means there is an opportunity for someone to do better. The gap is an inefficiency in the marketplace which is being exploited by buyers, but could just as easily be exploited by sellers.
Further, the difference between value and market price means that at least one of them is wrong.
