The biggest threat to security from e-mail is by reading it with Outlook. The best replacement I've found is Ximian's Evolution (written for Linux, but runnable in Windows with libraries like Cygwin). It's interface is very similar to Outlook, so it's an easy migration. It'll display HTML e-mails, but will not execute code and has the option to turn off images and not load images retrieved from web sites. With an add-on it can also work seamlessly with Exchange. But really any good e-mail program should do all of this. The solution is to not use Outlook.
